										<content:encoded><![CDATA[<p class="has-normal-font-size wp-block-paragraph">地瓜蛋塔 高纖又好吃～每當感到煩躁時，我發現下廚可以讓我靜心一會兒，用心料理的食物也會讓滿足感倍增，但常常沒有這麼多時間，所以快速、零廚藝，同時兼具美味和營養的菜單都是我的心頭好&#x2764;&#xfe0f;</p>



<p class="has-normal-font-size wp-block-paragraph">烤熟後軟軟糯糯QQ的燕麥地瓜塔皮，搭配滑嫩的蛋撻餡，或許底下還可以加一片巧克力，天哪！用想的就好香，雖然在成功前的試做總會有些失敗品(笑)</p>



<p class="has-normal-font-size wp-block-paragraph">塔皮的含水量很關鍵，我買到紅地瓜，蒸熟水分挺多，或許黃和紫地瓜會更容易成形，燕麥也可以買壓扁的即食燕麥，吸水性好更容易成形，烤乾塔皮的步驟或許就可以省略了！</p>

<ul class="wp-block-list">
<li class="has-normal-font-size">溫度是華氏360度，攝氏約175-180</li>



<li class="has-normal-font-size">紅地瓜水份多，黃或紫地瓜製作塔皮可拌入一點水份或鮮奶</li>



<li class="has-normal-font-size">烤模要抹油比較好脫模</li>



<li class="has-normal-font-size">若用相對不甜地瓜品種，糖漿可酌量增加&#x1f609;</li>



<li class="has-normal-font-size">我壓的塔皮稍厚約0.5cm，成品有比烤模矮一點點，避免蛋液滲出</li>



<li class="has-normal-font-size">如果蛋比較大顆也可以減量牛奶或多做一顆&#x1f638;</li>



<li class="has-normal-font-size">蛋塔內餡減量牛奶可能會吃起來很像蒸蛋，喜歡甜可以加量糖漿（加到20g也沒可以只是熱量問題&#x1f638;）</li>



<li class="has-normal-font-size">不要期待和一般蛋撻一樣，你可以想成地瓜布丁蛋糕，也算名副其實</li>

<p class="wp-block-paragraph">The Shed躺在口袋名單許久一直沒機會去吃，終於在去年末有幸和@flowerbyshuhan 去吃喝聊天，毫無懸念地點了雞腿溫沙拉，我對雞腿真的沒有免疫力，只要有雞腿就逃不過我的嘴(?)&#x1f357;</p>



<p class="wp-block-paragraph">心想香料雞腿應該是可以想像的味道，結果<strong>出乎意料地好吃</strong>！香氣十足的無骨雞腿丁大小適中，讓調味發揮到最佳狀態，沒有過度的醃漬感甚至死鹹的程度，入味得恰到好處，生菜、雞腿、根莖澱粉與水果的比例也均衡舒服！</p>



<p class="wp-block-paragraph">實在令我印象深刻，裡面的每一個食材都吃得出用心，總之，這份沙拉體現了穠纖合度，<strong>剛剛好就是最好</strong>&#x1f60b;</p>



<p class="wp-block-paragraph">蕎麥鮮奶茶也好喝，就是麥芽牛奶的味道，熱熱喝好療癒～推薦有去大安區喝咖啡的朋朋去踏踏&#x1f463;（什麼年代的說法？)</p>

<p class="wp-block-paragraph" style="text-align:center;">我這次用的粉類比例為 <strong> 地瓜粉:太白粉:粉心粉 = 1:1.5:2.5<br></strong> 之前試過沒有用低筋麵粉或粉心粉的版本<br> 結果呢～就像蚵仔煎哈哈<br> 我也試過把麵粉替換成糙米粉的版本<br> (總而言之就是在試不用麵粉的蛋餅)<br> 換成糙米粉比想像中好吃的<br> 糙米的香氣和很多餅字頭的都好速配<br> 用糙米粉做的蛋餅或餅乾 都很~香~餒(在學誰)</p>



<h3 class="wp-block-heading">░ 材料(1人份) ░</h3>



<p class="wp-block-paragraph"> ► <strong>食材</strong></p>



<ol class="wp-block-list"><li>雞蛋 1顆</li><li>太白粉15g</li><li>地瓜粉(樹薯粉) 10g</li><li>粉心粉(低筋麵粉) 25g</li><li>蔥 10g</li><li>鴻喜菇 25g</li><li>九層塔 隨意</li></ol>



<p class="wp-block-paragraph"> ► <strong>調味料</strong></p>



<ol class="wp-block-list"><li>橄欖油 2茶匙</li><li>水 120ml</li><li>鹽巴 1/2t</li><li>胡椒粉 1/4t (直接加胡椒鹽也可以)</li><li>醬油 適量</li></ol>



<h3 class="wp-block-heading"><strong>░ 作法 ░ </strong></h3>

<ol class="wp-block-list"><li>秤好粉料和食材</li><li>粉類也可以用湯匙來估計</li><li>(粉類一平匙約10g)</li><li>鴻喜菇切碎</li><li>蔥切成小珠</li><li>粉類混和後加水拌勻</li><li>加入蔥末</li><li>加入胡椒粉和鹽巴混合均勻</li><li>(可省略)雞蛋可以先打勻</li></ol>

<p class="wp-block-paragraph">1. 平底鍋加入橄欖油以中小火熱鍋(約1分鐘即可)</p>



<p class="wp-block-paragraph">2. 加入粉漿使之均勻分散到平底鍋</p>

<p class="wp-block-paragraph">4. 同一熱鍋加入鴻喜菇炒出香氣</p>



<p class="wp-block-paragraph">5. 加入雞蛋和九層塔攤平</p>



<p class="wp-block-paragraph">6. 馬上再加入餅皮混和炒勻(5.6. 動作要快速 餅皮和蛋液才易混和均勻)</p>
