<h3 class="wp-block-heading">各式各樣的 健康麵包</h3>



<p class="has-medium-font-size">健康麵包 是歐式、老麵還是酸種麵包？是雜糧、堅果還是穀物麵包呢？其實健康這兩個字太過廣泛，沒有限制使用條件的情況下，再加上現在麵包種類實在太多種了，隨便符合一個看似「健康」的條件就可以被套上健康麵包的名字，但這也沒有錯，對吧！只不過要特別小心符合一個健康條件，卻同時符合一個甚至數個不健康的元素，這麵包還算健康嗎？</p>



<h3 class="wp-block-heading">社會標準的「不」 健康麵包</h3>



<p class="has-medium-font-size">除此之外，也可以先反過來思考，到底為什麼總是很多人覺得麵包不健康呢？其實不外乎高油、高糖、精緻等所為「不健康」的標籤，高油高糖的東西充滿熱量，通常都可以快速滿足人類大腦對於生存的基本需求，馬上可以感受到幸福，加上現在食品加工的進步，為了吸睛的外觀、完美的口感和豐富的味道，很多精緻的麵包除了肉眼可見的裝飾或餡料外，更多隱藏版的添加物，是看不到甚至嚐不出來的。</p>



<h2 class="wp-block-heading has-background has-medium-font-size" style="background-color:#f6b85573">你有考慮過麵包控的心情嗎？</h2>



<h3 class="wp-block-heading">滿足心靈的 健康麵包 </h3>



<p class="has-medium-font-size">不過說到麵包的本質和營養，單純的麵粉製作的麵包，不過就是人類身體能量的來源之一罷了，面對麵包的心情，其實如同面對任何食物的態度，沒有所謂好的或壞的食物，抱持著想吃就吃，不要抱持著非要吃回本，之後不能吃等逞罰或彌補等負面心情去吃，用享受和幸福的心態去慢慢品嚐，吃完了之後，除了感受到身體飽足之外，心也才能一起滿足，當然就不會遇到「不吃還好，但一吃就暴食」的狀況了，這也是我會給「<strong>總是對自己喜愛食物有吃與不吃矛盾的人</strong>」的建議</p>



<h3 class="wp-block-heading">做屬於自己的 健康麵包</h3>



<p class="has-medium-font-size">你也是在意健康的麵包控嗎？我就是，從一顆10元的奶酥麵包到一顆300元的桂圓麵包我都愛，在大學的時後曾經上過一個學期的烘焙課，也在當時考取了麵包類的丙級烘焙證照，對於麵包的喜愛到出了社會仍會偶爾把玩一番。</p>



<p class="has-medium-font-size">還記得小時候夢過常去的麵包店，擺著我的dream bread：超大的白麵包，就是什麼都沒有包的超大原味麵包，長大想想這麵包根本超無聊哈哈哈&#x1f602;</p>



<p class="has-medium-font-size">在台灣，麵包店隨處都有，價格也很經濟實惠，然而在加拿大飲食習慣的改變，並沒有像在台灣走出家門就好幾家麵包店，於是我重拾了烘焙魂，自己做麵包的療癒又再度救贖了離鄉的我每一個emo的時刻&#x2764;&#xfe0f;</p>

<h2 class="wp-block-heading has-background has-medium-font-size" style="background-color:#f6b85573">健康麵包 自己做－葡萄乾麥香老麵包 Raisin Wheat Loaf </h2>



<p class="has-medium-font-size">今天分享一款，用幾個簡單材料就可以製作的老麵麵包，取名叫做<strong>葡萄乾麥香老麵包 Raisin Wheat Loaf</strong>，因為用了部分全麥粉，最後還加入葡萄乾點綴，所以顧名思義。</p>



<p class="has-medium-font-size">這是我第一次用老麵種，之前曾經用過液種做麵包，發現特殊麵種的加入，都可以有不同的麵包質地和口感，之後有機會再整理液種的做法給大家：）</p>



<h2 class="wp-block-heading has-background has-medium-font-size" style="background-color:#eda376">材料</h2>



<h3 class="wp-block-heading">一、老麵種（Starter）</h3>



<ol class="wp-block-list">
<li class="has-medium-font-size">All purpose flour 中筋麵粉 100g</li>



<li class="has-medium-font-size">速發乾酵母 0.5g</li>



<li class="has-medium-font-size">水 65c.c.</li>



<li class="has-medium-font-size">鹽 2g</li>
</ol>

<h3 class="wp-block-heading">二、食材</h3>



<ol class="wp-block-list">
<li class="has-medium-font-size">高筋麵粉 100g</li>



<li class="has-medium-font-size">全麥麵粉 100g</li>



<li class="has-medium-font-size">速發乾燥酵母 3g</li>



<li class="has-medium-font-size">鹽 2g</li>



<li class="has-medium-font-size">水 160c.c.</li>



<li class="has-medium-font-size">(主麵團用)無鹽奶油 20g</li>



<li class="has-medium-font-size">老麵 50g</li>



<li class="has-medium-font-size">(表面增香用)無鹽奶油 10g </li>



<li class="has-medium-font-size">葡萄乾 1/2杯（適量即可，避免麵團被劃破）</li>
</ol>



<h3 class="wp-block-heading has-background has-medium-font-size" style="background-color:#eda376">器具</h3>



<h3 class="wp-block-heading">麵包烤模</h3>



<ul class="wp-block-list">
<li class="has-medium-font-size">12兩長蛋糕模（或吐司模具亦可）</li>
</ul>



<h3 class="wp-block-heading">使用器材</h3>



<ul class="wp-block-list">
<li class="has-medium-font-size">攪拌機（和具攪拌功能的麵包機</li>



<li class="has-medium-font-size">攪拌鋼盆（我直接用攪拌機上的剛盆，秤重除了奶油外的材料和基礎發酵也都直接至於此盆）</li>



<li class="has-medium-font-size">稍大一點的烤箱（約25~30L應該就足夠了，不一定需要上下火溫度分開加熱的）</li>



<li class="has-medium-font-size">3條中小條毛巾（建議新的且清水洗乾淨）</li>



<li class="has-medium-font-size">耐熱瓷盤（有一點深度可裝水）</li>
</ul>



<h3 class="wp-block-heading has-background has-medium-font-size" style="background-color:#eda376">作法</h3>



<h3 class="wp-block-heading">一、老麵種製作</h3>



<ol class="wp-block-list">
<li class="has-medium-font-size">所有材料混合均勻</li>



<li class="has-medium-font-size">室溫發酵30~40分鐘</li>



<li class="has-medium-font-size">冷藏至少12小時</li>



<li class="has-medium-font-size">使用剩餘冷凍保存</li>
</ol>



<h3 class="wp-block-heading">二、主麵團製作</h3>



<ol class="wp-block-list">
<li class="has-medium-font-size">主麵團用奶油冷藏狀態切丁（冷凍需退冰至軟）</li>



<li class="has-medium-font-size">秤取所有材料，吐司烤模內塗一層薄薄的油以避免麵團沾黏（我用可耐高溫的酪梨油）</li>



<li class="has-medium-font-size">將<strong>(表面增香用)無鹽奶油</strong>切成細長條約3小條</li>



<li class="has-medium-font-size">將麵粉（高筋麵粉和全麥麵粉）、速發乾酵母、水和鹽巴放入攪麵鋼，以中低速攪拌成團，約需8~10分鐘</li>



<li class="has-medium-font-size">將切丁奶油分散壓入麵團中，繼續以低速至中速攪拌至奶油完全吸附進麵團（盆邊無奶油或麵團沾黏狀態）</li>



<li class="has-medium-font-size">將麵團攪拌至出膜（約攪打15分鐘）</li>



<li class="has-medium-font-size">初次發酵：至於烤箱或微波爐內發酵90分鐘</li>



<li class="has-medium-font-size">取出麵團排氣（6~7分力氣壓平或桿平即可，不用壓或桿太扁）</li>



<li class="has-medium-font-size">中間發酵：麵團折三折，蓋上保鮮膜或濕布鬆弛15分鐘</li>



<li class="has-medium-font-size">發酵完畢後將麵團桿長，平均撒上葡萄乾，稍微壓入麵團即可</li>



<li class="has-medium-font-size">由上往下按壓蓋（捲起）3~4折，底部和兩端側邊稍微整形收口</li>



<li class="has-medium-font-size">封口朝下放入吐司模具</li>



<li class="has-medium-font-size">最後發酵：至於烤箱或微波爐內發酵90分鐘，7~8分滿即可</li>
</ol>



<h3 class="wp-block-heading">三、毛巾蒸氣烘烤（烤箱預熱）</h3>



<p class="has-medium-font-size">&#x1f517;一樣參考了巧兒灶咖：毛巾蒸氣烘烤法 <a href="https://ciao.kitchen/wheat-germ-bread/">Ciao&#8217;s Kitchen</a></p>



<ol class="wp-block-list">
<li class="has-medium-font-size">耐熱烤盤或瓷盤放入3條捲起來的毛巾（我用新的毛巾，用清水清洗過）</li>



<li class="has-medium-font-size">到入熱開水放在烤箱底層</li>



<li class="has-medium-font-size">烤箱預熱450華氏度（232攝氏度）</li>
</ol>



<h3 class="wp-block-heading">四、麵包進爐前（發酵完畢後準備進爐）</h3>



<ol class="wp-block-list">
<li class="has-medium-font-size">在吐司表面劃上一刀（專用麵包刀劃或銳利一點的刀亦可）</li>



<li class="has-medium-font-size">篩上麵粉（我用all purpose flour中筋麵粉）</li>



<li class="has-medium-font-size">表面刀劃出的縫隙擺上一排<strong>(表面增香用)的無鹽奶油</strong></li>
</ol>



<h3 class="wp-block-heading">五、烤箱預熱完畢進爐烘烤（毛巾蒸氣烘烤）</h3>



<ol class="wp-block-list">
<li class="has-medium-font-size">預熱好的烤箱調回380華氏度（193攝氏度）烤15分鐘</li>



<li class="has-medium-font-size">15分鐘後取出毛巾們</li>



<li class="has-medium-font-size">繼續烘烤15分鐘就可以囉&#x1f389;</li>
